The Far East is much closer than we actually think it is: Since September 1998 already the best of Asian culture and cuisine has been united in a varied and fascinating location in the basement of Fairmont Hotel Vier Jahreszeiten. This exciting restaurant is called "Doc Cheng's® ": It is a gastronomic and artistic treasure chest, combining Oriental woodcarvings and far-eastern furniture with the secrets of exotic cuisine.

The Euro Asian restaurant Doc Cheng's®, in its tenth year of existence, enjoys a large fan community. Chef Jan Unger, doesn't know what a standstill is and constantly creates something new for the palate and the eye. "Doc's cuisine makes everyone happy" is the quote in Marcelinno's guide and in the top ten list of "bars", Doc Cheng's® is at the top. The Gault Millau rewards Unger's continuous creativity with 14 points.

Doc Cheng's® is a temple of atmosphere and oriental wisdom. Those entering the foyer immediately see the show kitchen, dishes and guests through the Asian iron railings. The atmosphere comes flooding over. Western lucidity, accentuated by Far Eastern artefacts that Doc Cheng collected on his world-wide travels, all documented in Doc Cheng's® very personal style.

Light, fresh, healthy and excitingly new: That was the gastronomic philosophy of Doc Cheng, who enjoyed western food just as much as he loved the dishes from his Asian homeland. His most important rule: quality and originality. Fish, meat, and poultry from the best farms in Europe and vegetables delivered several times a week from Asia.

Our cooks have an original Asian show kitchen to prepare dishes according to ancient recipes: A wok station with two heavy iron saucepans, a steamer and an Indian Tandoori. The Indian stone oven is used to gently cook dishes on long skewers and allow a special aroma to unfold, whilst preserving vitamins. The 280 degree centigrade Tandoori has to be filled from above - a task that needs real experts.

The secret of our Euro-Asian food lies in the fact that every ingredient - whether vegetables, sauces or meat - is specially chosen, and prepared using traditional recipes and methods. For instance: "Tandoori-lemon grass-chicken with Kailan vegetables", or "Mango mousse on passion fruit served with Pandan ice cream".

Such a gastronomic concept needs to be appropriately presented. At Doc Cheng's® we not only concentrating on the culinary arrangement of our food, but also try to create works of art with our plates, cups and glasses. Exclusive porcelain shows exquisite dishes even more to its advantage; staff dressed in traditional Mao costumes conveys the mixture of the young "scene" and sophisticated gastronomic culture.

In dem großen Weinkeller des Doc Cheng’s® lagern nicht nur die klassischen Spirituosen, exquisite französische und italienische Weine und deutsches Bier, sondern auch Exoten. Das Doc Cheng's® setzt auf Innovation und offeriert zum Beispiel 20 Sorten ausländischen Hopfensaftes, darunter Bier aus Thailand, Vietnam und Singapur.

Doc Cheng's® really breaks the mould with its food, design, presentation and service - The old master would be proud of what has been achieved: The merging of Asia and Europe.

Wine experts will also feel cared for with 1,400 different wines. There is also the chance to discover entirely new tastes: Such as excellent wines from New Zealand and South Africa, Chile, China and California. However, the wine bottled especially for Doc Cheng's® originates from Germany: Grapes grown at the Mosel give this home-grown "social lubricant" a very special taste.

Another speciality is the half-litre bottle that was especially designed for Doc Cheng's®.

Integrated in the restaurant is the Bar Indochine, which - physically slightly detached - offers the complete spectrum of classical and trendy drink specialities and cocktails as well as a large selection of cigars.

A fresh approach to cuisine and a young team waits to spoil you and your friends with Euro-Asiatic specialities.
